Magical Immunity Mushroom Salad
1/2 C Olive Oil
3 Tbs. Apple Cider Vinegar
1/4 C Mushroom Powder
Salt & Pepper
3-4 C mixed raw mushrooms; shiitake, button, portobello, oyster, enoki
1 Tbs. olive oil
2 Tbs. coconut aminos or tamari
Pinch salt and pepper
Cut button mushroom in quarters and mix with all other mushrooms except enoki.
Marinate for one hour and then mix with enoki at time of plating.
Mix all dressing in blender.
Make dressing and spoon a generous amount in a circle on the bottom of plate. Place marinated mushroom on top.
Spoon a little dressing in top of mushrooms and sprinkle with additional mushroom powder.
Add sliced chives.
Cut any type of mushrooms into small pieces including stems. Dehydrate until dried. Powder in high speed blender.
